Probably the same basis as ALTTP. He turns into a wolf when he enters the Twilight Zone, I believe. In ALTTP, when you enter the dark world, Link turns into a bunny unless he has the moon pearl.

I could've rode around killing enemies all day, but I wanted to kill the boss.

In screenshots, and the demo, you'll see the horse's name is Epona. That's because they pre-named the horse. In the actual game, you get to name it yourself (I think :P).
